Pasta with Burrata Cheese, Guanciale, and Red PestoFirst Courses

🛒 INGREDIENTS

  • 190 gr BIS Pasta
  • 300 gr Guanciale (cured pork cheek)
  • 150 gr Parmesan Cheese
  • 3 tablespoons BIS Red Pesto
  • 1 Burrata Cheese
  • Basil – to taste

📝 DIRECTIONS

  1. Prepare the guanciale: Start by cutting the Guanciale in half, removing the rind and the spiced part, and then cutting it into strips. Place the guanciale in a pan and sauté it over low heat until it becomes crispy. Then, drain it on paper towels to remove excess oil.
  2. Prepare the sauce: In a bowl, pour the BIS Red Pesto and add the fresh Burrata, taking only the soft and creamy inside part. Also add some of the guanciale fat and a ladleful of pasta cooking water to make the sauce even creamier and more flavorful. Mix well to obtain a smooth consistency.
  3. Cook the pasta: Cook the BIS Bronze-Die Gragnano Mezze Maniche pasta in plenty of salted water. When the pasta is al dente, drain it directly into the bowl with the prepared sauce, mixing well to combine all the ingredients. Add a generous sprinkle of grated Parmesan cheese for an extra touch of flavor.
  4. Complete the dish: Add the crispy Guanciale on top of the pasta and plate it with the rest of the Burrata for a super creamy effect. Finish with a few fresh Basil leaves to add freshness and color.
