  • BIS Chickpeas – 400-500 gr
  • Breadcrumbs – 100 gr
  • Eggs – 4
  • Pecorino Cheese – 250-300 gr
  • Pepper – to taste
  • Garlic clove – 1
  • Don Vincenzo Extra Virgin Olive Oil – to taste
  • Frying oil – to taste
  • Mayonnaise – 100 gr
  • Teriyaki or Soy Sauce – 2 tablespoons
  • Sesame seeds – 2 tablespoons

📝 DIRECTIONS

  • Preparing the meatballs:
  1. Start by rinsing the BIS Chickpeas under running water. Then, transfer them to a food processor and add the pepper, the garlic clove, one whole egg, a generous amount of grated pecorino cheese, and a drizzle of Don Vincenzo extra virgin olive oil.
  2. Blend until you obtain a thick and workable mixture. If necessary, add a little breadcrumbs to get the right consistency.
  3. With your hands, form small balls with the mixture. Then, roll them in the breadcrumbs to get a crispy crust.
  • Frying the meatballs: 4. In a pot, heat the frying oil. When the oil is hot, gently immerse the meatballs, letting them brown for about 3-4 minutes, until they are crispy and golden brown on all sides. 5. Remove the meatballs and dry them on paper towels to eliminate excess oil.
  • Preparing the soy mayonnaise: In a bowl, mix the mayonnaise with the soy sauce or Teriyaki sauce until you get a creamy and smooth dressing. Add the sesame seeds for a crunchy note.
  • Plating the dish: 7. Plate the golden meatballs and serve them accompanied by the soy mayonnaise with sesame seeds for a perfect contrast of crispiness, creaminess, and flavors.
