- 180 gr BIS Semolina Spaghetti
- 400 ml BIS Tomato Passata (Purée)
- 400 gr Ricotta Cheese
- 2 Sausages (about 200-250 gr)
- 250 gr Classic Ground Pork
- Fresh Basil – to taste
- Salt – to taste
- Pepper – to taste
- Garlic – 3-4 cloves
- Don Vincenzo Extra Virgin Olive Oil – to taste
📝 DIRECTIONS
- Preparing the ragù sauce: Start by sautéing the garlic cloves in Don Vincenzo Extra Virgin Olive Oil, which gives a unique and aromatic flavor to the dish. Let the garlic brown nicely, then add the BIS Tomato Passata (Purée) and cook over medium heat for a few minutes, stirring occasionally.
- Preparing the meat mixture: In a separate pan, combine the ground pork and the sausages (previously crumbled). Brown everything until the meat is well-browned and cooked through. Once ready, deglaze with a little red wine and let it evaporate.
- Combining the ragù and ricotta: Add the browned meat to the tomato sauce and let it simmer over low heat for about 10 minutes. After that, incorporate the ricotta cheese into the ragù, stirring well to obtain a creamy and homogeneous consistency. Adjust with salt and pepper.
- Cooking the spaghetti: In the meantime, cook the BIS Semolina Spaghetti in plenty of salted water. Drain them al dente, reserving some of the cooking water to emulsify the dish if needed.
- Plating the dish: Add the drained spaghetti directly to the pan with the meat and ricotta ragù, stirring well to combine the flavors. If the sauce is too thick, add a little of the pasta cooking water. Plate with a generous portion of spaghetti, garnishing with a few fresh basil leaves.
